guess you got sort of a monolithic kernel
if you build the ddp-support (appletalk) as a module ( i would
recommend also the nic-driver)
then you can stop netatalk (atalkd, afpd sits just on it)
unload the module ddp
ifconfig down your nic
ifconfig it up
load ddp
start again
